IBERICO PROSCIUTTO HAM
Pork ham, dry-cured for 18 months in the Italian tradition. Crafted by EcoFriendly Foods. In the finals for the Good Food Awards!

BENTON’S HAM
Pork ham, cured in salt for 6 months, then smoked slowly until fully cooked. Crafted by Allan Benton, of  Benton Smoky Mountain Country Hams in Madisonville, TN.

BENTON’S HICKORY-SMOKED BACON
Pork belly, cured and heavily smoked by Allan Benton.

SWEET BACON
Pork belly, cured with salt, sugar, and black pepper for 30 days. Also available with a touch of hickory-smoke. Crafted by EcoFriendly Foods.

MAPLE-CANDIED BACON
Pork belly, cured in salted maple syrup for 30 days, then lightly smoked with hickory. Crafted by EcoFriendly Foods.

GUANCIALE
Pork jowl, cured in salt, sugar, juniper, and aromatics for three months. Similar to bacon, but can be eaten raw. Crafted by Kyle McKnight, Executive Chef at Manna in Wilmington, NC.

LIL NENA’S HAM
Deboned pork ham, broken down, spiced, and cured for approximately three months. Crafted by Kyle McKnight.

TASSO
Pork ham or shoulder pieces, rubbed heavily with pungent spices (e.g. smoked Spanish paprika), then smoked slowly until fully cooked. Crafted by Kyle McKnight.

PASTRAMI
Pork ham or shoulder pieces, brined and rubbed with classic pastrami spices (e.g. coriander, pepper, mustard, garlic, ginger, etc.), then smoked slowly until fully cooked, as is done in the Old-World traditions. Crafted by Kyle McKnight.

SALUMI
A variety of Salumi products, crafted by Kevin Outz, Chef & Owner of Spotted Trotter in Atlanta, GA.

COPPA
Whole pork shoulder, spiced and cured for approximately three months. Crafted by EcoFriendly Foods, Kyle McKnight, and/or Kevin Outz.

BACON POPCORN
Popcorn cooked in lard and seasoned with crumbles of our Benton’s Hickory-Smoked Bacon. Crafted by David Guas, Executive Chef & Owner of Bayou Bakery in Arlington, VA.

All products listed above (except for the bacons) can be enjoyed uncooked, right out of the package.

Pick-Up & Shipping Details

Available for pick-up and purchase the weekend before Christmas
at two DC-area Farmers Markets:
Arlington Courthouse (Sat 12.22 | 8-12) or DuPont Circle (Sun 12.23 | 8:30-1)
Shipping to other locations is also available, but not included. Flat Fee $15.45
